Home to all things vegan, Los Angeles will soon boast its own vegan Jewish deli pop-up! Passion project of Chef Megan Tucker, Mort & Betty’s Vegan Deli will host its first event in Los Angeles on November 11, complete with a delicious assortment of vegan dishes inspired by the flavors of global Jewish cuisine.

We caught up with Chef Megan to get the scoop. The pop-up is the first step in achieving her dream of opening a farmed animal sanctuary—5 percent of profits will be set aside for that purpose. She explains her motivations for the menu:

It took a while to decide what type of menu I wanted to create for the pop-up. A vegan Jewish deli made sense for me because those are the foods I grew up with—it’s my background. Mort and Betty were my grandparents. They both suffered from diet-related degenerative diseases—cancer and diabetes. Creating a menu of items they loved, and making everything with health-promoting plants, just felt right.

Chef Megan brought veganized quintessential Jewish deli items, like corned beets, carrot lox, white carrot whitefish salad, and mushroom pastrami, to eager Angelenos at a recent tasting. And don’t forget the matzoh ramen, made with miso-turmeric broth.
